How to prepare Kashmiri Pulao (Palak Gajar Pulao)

Kashmiri pulao is one of my favorite pulao, sumptuous rice dish made from spinach and carrots. You can enjoy it warm with any raita. This is one of the rice dishes you can cook very easily and has the flavour & nutrition you would need. 

Serves: 2


Cooking time: 30 minutes

Ingredients

  • 2 cups palak (finely chopped)
  • 2-3 carrots (grated properly)
  • 1 cup Basmati rice
  • 2 tbsp Desi ghee or refined oil
  • 1-2 onion (finely chopped)
  • 2 elachi
  • 2 pieces daal cheeni
  • 2 cloves (loong)
  • ½ - 1 tsp sabat saunf
  • 1 – 2 tsp salt
  • 1 tsp red chilli powder
  • 2 hari mirch (finely chopped)
Method

  1. Wash and soak the rice for 10-15 minutes and on other hand, add oil in the pan and keep it on fire
  2. Fry the dry masala (elachi, dal cheeni, loong, saunf) till it starts sizzling
  3. Add the grated carrot and fry it for 2-3 minutes and add hari mirch. Then add the washed rice in the pan.
  4. Add salt, red chilli powder and 2 cups of water. Stir it well and bring it to a boil.
  5. Cover the pan and cook it on slow flame till the rice is ready done.
  6. Once the rice is prepared, mix the grated palak and cover it and further cook it till it is completed done.
  7. Serve your biryani in a fancy dish with raita
