Easy Recipe for Shahi Tukda

It is said & believed in India that you should start a new work with some sweet (meetha), as it is considered auspicious. So, I am starting this blog of Indian Recipes with a sweet dish which is one of my favourites, the Shahi Tukda. I used to love it whenever my mom used to cook this for me, could easily have 4-5 pieces of Shahi Tukda, without worrying about the calories it contains. Shahi Tukda is a quite ravishing & royal sweet dish which very simple & easy to cook. This dish comes from Hyderabad & is prepared out of bread. It is named Shahi for a reason that it is very rich in flavour and cream. So, below is the easy recipe for Shahi Tukda for you to try out.

Serves: 4
Cooking Time: 30 mins, ready in 2 hrs 30 mins.
Calories: 700-800 Calories per serving

Ingredients:
  1. 1 litre full-cream milk
  2. 1 can sweetened condensed milk (used Amul Milkmaid)
  3. ½  tsp cardamom powder
  4. 6-8 slices of bread (in round or square or triangle shape)
  5. 1 cup of Ghee (to deep fry the bread)
  6. ¼  cup of  blanched almond and ¼ cup cashews (for garnishing)
Note: I have not used sugar in this recipe instead I have used sweetened condensed milk

Directions:
  1. Heat the Ghee in medium flame in a pan and fry the bread slices till they are crispy and golden in color. Once your bread slices are prepared, remove it from the pan and drain on paper towels.
  2. Fry the cashews and almonds in the same heated Ghee until they get golden brown. Remove from the pan and keep it aside to cool.
  3. In another thick bottomed pan, mix the milk and condensed milk and boil till it is reduced to half of original volume. Cook it in slow flame. Stir frequently until it gets thick. Add 2 pinch of cardamom powder and mix it well (to add flavor) and remove from flame.
  4. Arrange the fried bread slices at flat serving dish and evenly top with the milk mixture.  Scatter the chopped nuts over the bread to garnish.
  5. Let this dessert cool down in the fridge for at least 2 hours before serving. Enjoy your Shahi Tukda!
